One of my favorite local Venice restaurants Gjelina serves up a delicious array of chilled beverages and since I’m not much into alcohol I often order one of their lime, ginger or cucumber sparkly beverages. At $5 a pop I decided to make my own to save money and to control just how sweet the mix is. After a little investigating I found out that the sweetener used was simple syrup a sweetener that I was very unfamiliar with until yesterday. Looking all over the baking aisles crossing paths with all types of syrups I couldn’t find simple syrup until suddenly it hit me and I thought “perhaps it’s in the cocktail aisle?!” Sure enough there it was in all of it’s sleek, slender and pristine glory!
Returning home from the store I realized that the syrup must be called simple for a reason, I began to research this ingredient and found out that it’s the simplest ingredient to whip up and doesn’t even require using a stove. For instance I found this recipe on about.com
“The easiest way to make simple syrup does not require a stove and can be made in minutes. Simply combine equal parts (1:1) sugar and water in a bottle and shake it until the sugar is completely dissolved. The result is a syrup that is thinner than rich simple syrup.”
Wanting to add my own twist to the classic mojito I added in coconut juice, sparkling water, lime, mint and simple syrup to make a perfectly chilled summer beverage that you of course could add spirits to! 😉

- 1/2 cup coconut juice
- 1/2 cup sparkling water
- 1 lime
- 16 mint leaves
- 2 tbsp simple syrup
- In two 8 ounce glasses divide the ingredients evenly first adding the lime juice, simple syrup and mint leaves muddle them together and then add the remaining ingredients to the glasses. Give a great stir, sip and enjoy! Garnish with a slice of lime.
