If only I had access to a genie in a bottle I would freeze time as I am not ready for summer to end. This was not my typical summer by any means, after all I’m just now realizing that I didn’t make time for not even one beach day, I live five blocks away. How this time flew by so quickly is mind boggling. Although, I haven’t savored the sand and ocean as I normally do I have had my fair share in other summer delights such as all of the extraordinarily juicy berries, melons and stone fruits. In fact this is really why I want to meet a genie, fast!
Luckily for now, Peaches are still piled high at my local farmers market stands. In fact they are as juicy as ever, I just can’t get enough of them. I’ve decided to start freezing them to savor their juicy goodness throughout the end of Summer. As I prepare myself for a 10 day trip to the desert in Nevada I will cherish this smoothie and all fresh food before I voyage on. Knowing good and well that when I return to my farmers market after my travels peaches will no longer be available and the stage will be set with falls beautiful bounty, bring on the pomegranates!
Summer has me freezing more than the peaches I’ve also been freezing all of my coconut meat as I haven’t been able to use it fast enough and I simply love using it as a base for smoothies. I hope you too will enjoy the last of the seasonal peaches and perhaps even freeze some too. If you came across a genie, what would you wish for?
- 2 cups almond milk
- 2 cups frozen peaches
- 1 cup spinach
- 1 tsp vita mineral green (optional to boost nutrition)
- ½ inch nugget ginger (peeled)
- 1 tbsp chia seeds
- ¾ cup frozen coconut meat
- 2 tbsp goji berries
- ½ cup mango
- Add all of the above ingredients except for gojis and mango to a blender and blend until smooth.
- Serve garnished with Goji berries and chopped fresh mango.
