Pudding & Filling: 1 1/2 ripe avocado, 1/2 cup cacao powder, 6 medjool dates, 1 cup almond milk, 2 tsp vanilla extract. Blend together and set aside.
Crust and Crumble: 1 cup walnuts, 2 tsp vanilla bean, 6 medjool dates, 1/2 tsp cinnamon: mix together using a food processor until crumbly.
For the pudding: Scoop one cup of the pudding mixture into a bowl and garnish with a bit of the crumble.
For the Pie: Press the remaining crumble into a pie pan and then pour the pudding on top. Using the back of a spoon to lift peaks for a pretty finish. Garnish with an avocado wedge and walnut.
*If you prefer a sweeter treat simply add in 1-2 tbsp of your favorite sweetener to the pudding and blend.
