Ever have one of those nights when you’re making dinner, and doing five other things at once? We had one of those nights and as a result ended up with mushy broccoli (ugh!). However I am a firm believer in opportunity from challenges and opted to save this broccoli for a time when I can give it more attention, with the idea that I’ll likely blend it into a pureed soup later in the week.
Glad I had hope, because later that night as I was scrolling through my insta feed I saw a beautiful bowl of greens in which one would just assume was a pretty bowl of guacamole by Francesca @the_golden_hour _. However, a closer look and a browse through the text, I was amazed to see that this was simply broccoli, avocado and lemon. The inspiration light bulb went off and sent me running to my kitchen! I could see with crystal clarity exactly how I would save the mush that remained on my stove top, albeit I was uncertain how this was actually going to taste. To my surprise the combination of broccoli and avocado is a green lovers dream! Rich, creamy and full of nutrition all the while feeling indulgent due the buttery whipped texture.
After my first bite I admired how both the broccoli and avocado held there own flavors throughout the mix. Bonus this recipe is an excellent way to get the kids to eat more broccoli if they struggle with eating those little green trees.
As I was putting this recipe together I jotted down what I was doing on my kitchen chalkboard. Being a fan of bright colors I was hesitant to add black to a wall but after living with it for more than half a year, I can honestly say it is the best decision we’ve made in terms of making our home more kid friendly. Everyone in my home enjoys using the wall, from grocery lists to affirmations, recipes and doodles, this wall makes all of us very happy!
Steam broccoli and let cool.
Add all ingredients to a blender or food processor and process until smooth.
Enjoy garnished with a squirt of lemon and red chili pepper flakes (optional).
