There are nights I can’t sleep thinking about what I will enjoy for breakfast. This type of insomnia I do not mind, it’s exciting! As I lay down conjuring up images of breakfast options, willing myself to rest, just to have the clarity and energy needed to execute the painting in my mind.
What fuels my excitement for breakfast further is knowing just how important those first few bites or sips actually are and I’m not only referring to the well-known nutritional benefits but the actual mental benefit too, they’re powerful! It’s like intention in motion, my actions and choices will create a ripple effect with the other choices that follow. Beautiful and naturally healthful breakfast choices helps steer my day in a positive direction. When temptation strikes (almost every morning) and I think about going to the bakery or coffee shop and grabbing a pastry, but then I bring my awareness back and focus on just how my breakfast will be fueling much more than the morning hours. This awareness drives me to eat fruits, veggies and whole foods vs. the all too tempting morning pastry or sugar laden processed foods that are marketed with the illusion of saving time.
Which makes one think, how much time is one actually saving? These quick and convenient type of food choices lead us spending more time fighting and eradicating illnesses, more time working out, slow us down often resulting in an energy crash all resulting in more time loss. The whole idea of fast food and convenience truly is a misnomer once you pause to think things through.
Instead of going for the quick and easy, I encourage you to go for the satisfying and supporting, in which I trust you will find can be very quick and easy with the flip of a blender button and mental switch. A thought came to me when I was meal prepping breakfast and lunch ideas for the week, so I jotted it down on my kitchen chalkboard in midst of food prepping to share the nugget of truth that landed on my plate with you. “Meal prep simply is the intention in motion, goals being worked towards with focus, dedication and commitment to self-love.” If this resonates with you then I encourage you to share this truth and recipe with the ones you care about.

Acai Berry & Friends Beauty Bowl
Serves: 2 full-sized bowls, plus a toddler bowl 😉
1 pack unsweetened acai (acai roots and/or sambazon are the two brands I use)
1 large frozen banana
1 cup frozen blueberries
1 tbsp protein powder (I use sun warrior)
1 cup rice milk (more if your blender needs a little push)
Add the above ingredients to a blender and blend until smooth.
Pour mixture into a bowl and *garnish with your favorite toppings.
*Top the bowl off with fresh fruits that you have on hand, nuts, seeds and other superfood sprinkles, homemade nut butters and enjoy!
