You’re in luck and not alone, this recipe was inspired by a request from a follower who wanted a vegan substitute for her morning eggs. Around mi casa I typically serve the scramble over mini tortilla’s with salsa and other savory fixins such as pickled veggies.
If you’re like me and typically have a sweet tooth, first thing in the morning, maybe you’d prefer to prepare this dish for lunch or dinner. Depending on what veggies are in my fridge or what’s in season at the farmers market determines what I like to throw into the mix. It’s a fun recipe to play around with as you can see from this video Nova and I made. Summer herbs and veggies make this dish pop and mushrooms really help give it a meatier feel. If you’re a potato lover then I’d imagine this would fit in nicely with some onions mixed in for good measure, hello breakfast burrito!
What I said earlier really is true, this dish can be as quick to whip up as morning eggs if you make a big batch in advance and serve it throughout the week, like I do around here. With just one pack of tofu and a bunch of chopped veggies this dish can make many servings leaving you satisfied in more ways than one. Simply scoop what you need onto a pan, heat and serve. Best of all I find the longer this dish sits in the fridge the better and deeper flavor it develops. A bonus for those of you feeding lil’s, you’ll be happy to know this recipe is kid made and beyond approved!
