Picture this, sunlight at “Golden Hour”, me shooting this recipe by a window located in my living room facing out towards the front yard. At the moment I decide I’ve taken enough shots (only 30 or so, lol) I look out the window and see my guys heading for the sidewalk with excitement smeared on their faces and roller skates strapped to Nova’s feet. With my trusty camera still attached, I dashed downstairs and began capturing magical moments that would have otherwise been too precious to miss.
Shaping moments of Nova’s life have been hard to capture lately. However, this moment with Nova and Alex was slow and sweet, time seemed to have slowed down and I soaked in the warmth and richness of the light and love that surrounded us. What’s so amazing is that this present moment also carried me back to my past, to the green bench in front of my grandpa’s work shed in Revere, Massachusetts where I grew up, to a moment in time when my mom and dad first helped me and my sisters strap on our first pairs of wheels. The excitement in these small but mighty moments of childhood are what stick with us as we grow up, it makes up the sweet nectar of life and I believe helps carry us through the challenges and difficulties we experience as growing human beings. These moments give us a strong foundation of joy, excitement, lessons of falling down and getting back up, exhilaration, freedom, trust, and so much more. These magic moments are ones that screens and distractions like constantly checking our inbox and social media can rob us from if we allow it. Which reminds me, I wanted to let you know about a book I’m reading called “Irresistible, The Rise of Addictive Technology and the Business of Keeping Us Hooked“, it’s a must-read for any of us who engage with our phones, tablets, laptops, computers and especially for parents to understand exactly what were exposing our children to beyond the shows.
Being present to the beauty of life, slowing down from constantly working to enjoy the sweet and simple moments life offers, is essential to my happiness and health. Whether it’s slowly sipping my morning beverage, reading a book, or enjoying a moment such as watching the sunset while being fully present brings much awareness, healing, and opportunity when I allow it.
My intention for sharing this recipe and story is to share the beauty and delight of simplicity. The trick to making this simple snack irresistible and crave-worthy is the quality of ingredients, choose wisely and let them shine. May your day be as golden as the honey drizzle over this rice cake!
On top of a brown rice cake slather and spread your favorite nut butter (I used almond butter). Next, add a few plump toppings blackberries, pepitas, bee pollen, and mini dark chocolate chips. For the finale drizzle with honey and dust with cinnamon.
