This somewhat unusual (for me) recipe came about during a Sunday meal prep session. The family and I just got back in from our Florida travels and as usual, after a week-long trip, the fridge was null of fresh foods and we took the opportunity to refill if with some of our family favorites and new faves such as this Coco Rico Passionfruit Yogurt from our local Mar Vista farmers market.
The boys helped make the green juice as well as prep and chop the veggies for the week. Nova had the best time separating the stems from the caps on our baby bellas. With all hands on deck in the kitchen, I worked to get everything in the fridge neatly (or a little OCDly) and began prepping breakfast jars, a large pot of quinoa, marinated veggies, and extra veggies for weekday meals.
Let’s circle back to these breakfast jars and the whole reason for this post, shall we. The reason I called this recipe unusual was primarily due to the fact that I don’t usually mix yogurt with my porridge bowls, often times due to the fact that the porridge bowls are always dairy free and I struggle to find a vegan yogurt that I love on every level. This is where Coco Rico comes in and saves my day and takes my morning bowl from great to extra-great! I not only love the beautiful color combination which is an instant bonus for someone like me who most definitely eats with her eyes first. But the flavor profiles worked beautifully together as well as the texture variances. The health benefits are through the lid, adding probiotics to the mix and a vibrant combination of vitamins, minerals, and nutrients that have me beaming like this full strawberry moon!
I know not everyone reading this will be able to get their hands on Coco Rico and believe me you don’t need it to benefit from this beautiful breakfast bowl recipe.
